1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 large egg

1 cup milk

1/4 cup creamy peanut butter

1 teaspoon vanilla extract

1/2 cup chocolate chips

Butter or oil for cooking

Maple syrup and additional chocolate chips for serving (optional)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined. Set aside.

    Combine Wet Ingredients: In another bowl, whisk the egg, milk, peanut butter, and vanilla extract until smooth. You may find it easier to mix the peanut butter in if it's slightly warmed in the microwave for about 10-15 seconds.

      Combine Wet and Dry: Pour the wet mixture into the dry ingredients, and gently fold until just combined. Do not overmix; some lumps are okay. Then, fold in the chocolate chips.

        Heat the Pan: Heat a large skillet or griddle over medium heat, and add a little butter or oil to coat the surface.

          Cook the Pancakes: Pour about 1/4 cup of the batter for each pancake onto the skillet and cook until bubbles form on the surface, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes or until golden brown.

            Serve: Stack the pancakes on plates and serve warm with maple syrup and additional chocolate chips if desired.
