Philadelphia Cheesecake Bars

For the crust:

1 ½ cups graham cracker crumbs

½ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the cheesecake filling:

2 (8 oz) packages Philadelphia cream cheese, softened

¾ cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

½ cup sour cream

2 tablespoons all-purpose flour

1 tablespoon lemon juice (optional)

For the topping:

Fresh berries (strawberries, blueberries, raspberries), for garnish

Mint leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C) and grease a 9x13 inch baking dish with cooking spray or line it with parchment paper for easier removal.

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, melted butter, and vanilla extract. Mix until the crumbs are well coated and resemble wet sand. Press the mixture firmly into the bottom of the prepared baking dish to form an even crust. Bake in the preheated oven for about 10 minutes or until lightly golden. Remove and let it cool slightly.

      Make the Cheesecake Filling: In a large mixing bowl, beat the softened Philadelphia cream cheese and granulated sugar together using an electric mixer on medium speed until smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl as necessary.

        Add Remaining Ingredients: Add the vanilla extract, eggs (one at a time), sour cream, flour, and lemon juice (if using). Beat until just combined and smooth, ensuring not to overmix, which can incorporate too much air.

          Pour the Filling: Pour the cheesecake filling over the cooled crust, spreading it evenly to reach the edges.

            Bake: Bake in the preheated oven for 25-30 minutes or until the center is set (a slight jiggle is okay). Turn off the oven and leave the cheesecake bars inside with the door slightly ajar for an additional 30 minutes to prevent cracking.

              Cool and Chill: Remove from the oven and let it cool at room temperature for 1 hour. Then, refrigerate for at least 4 hours (or overnight) until fully chilled and set.

                Serve: Once chilled, lift the cheesecake from the baking dish using the parchment paper (if used). Cut into bars and garnish with fresh berries and a sprig of mint if desired.
