Ingredients

1 cup all-purpose flour

1 cup sweetened condensed milk

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 cup crushed pineapple (drained)

1/2 cup shredded coconut (optional)

Fresh pineapple slices for garnish (optional)

Whipped cream for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix Wet Ingredients: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the sweetened condensed milk and mix well. Incorporate the eggs one at a time, mixing thoroughly after each addition. Add the vanilla extract and combine.

Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Add Wet to Dry: Gradually add the dry ingredients to the wet mixture, mixing gently until just combined. Take care not to overmix.

Fold in Pineapple and Coconut: Carefully fold in the crushed pineapple and shredded coconut (if using) until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared cake pan and smooth the surface with a spatula. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cake: Once done, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Garnish and Serve: Once cooled, you can garnish the cake with fresh pineapple slices. Serve with a dollop of whipped cream if desired.

Enjoy: Slice into pieces and enjoy this delightful tropical treat!
