500g minced beef (preferably slightly fatty for flavor)

2 tablespoons vegetable oil or ghee

1 large onion, finely chopped

2 green chilies, slit lengthwise (adjust to taste)

4 cloves garlic, minced

1-inch piece ginger, grated

2 large tomatoes, chopped

1/2 cup frozen peas (optional)

1 teaspoon cumin seeds

1 teaspoon coriander powder

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

Salt to taste

Fresh cilantro leaves, chopped (for garnish)

Juice of half a lemon

Instructions
 

Heat the Oil: In a large pan over medium heat, heat the vegetable oil or ghee. Add the cumin seeds and let them splutter.

    Sauté Onions: Add the finely chopped onions to the pan. Cook, stirring occasionally, until the onions turn golden brown.

      Add Spices: Stir in the garlic, ginger, and green chilies. Sauté for a couple of minutes until fragrant.

        Incorporate Tomatoes: Add the chopped tomatoes to the mixture. Cook until the tomatoes break down and the mixture is well combined and saucy, about 5-7 minutes.

          Cook the Beef: Add the minced beef to the pan. Break it apart with a spatula and cook until it is browned, about 8-10 minutes.

            Season Well: Stir in the turmeric powder, coriander powder, red chili powder, and salt. Mix well to ensure the beef is well coated with spices. Cook for another 5 minutes.

              Add Peas: If using, stir in the frozen peas and continue cooking for an additional 5-7 minutes on low heat, allowing the flavors to meld.

                Finish It Off: Sprinkle the garam masala and mix. Remove from heat and squeeze fresh lemon juice over the dish.

                  Garnish: Serve hot, garnished with freshly chopped cilantro.
