2 cups cooked jasmine or basmati rice (preferably day-old)

2 tablespoons vegetable oil (or sesame oil for extra flavor)

3 large eggs, beaten

1 cup mixed vegetables (peas, carrots, corn; fresh or frozen)

3 green onions, chopped

2-3 cloves garlic, minced

3 tablespoons soy sauce (low-sodium preferred)

1 tablespoon oyster sauce (optional)

1 teaspoon sesame oil (for finishing)

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Rice: If using fresh rice, spread it out on a baking sheet and let it cool to remove excess moisture. Day-old rice is best as it’s less sticky.

    Heat the Pan: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.

      Scramble the Eggs: Pour in the beaten eggs and scramble them until just set. Remove from the pan and set aside.

        Sauté the Vegetables: Add the remaining tablespoon of vegetable oil to the pan. Toss in the minced garlic and sauté for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for about 3-4 minutes until they are heated through.

          Add the Rice: Increase the heat to high, then add the prepared rice. Break up any clumps and stir well to combine with the veggies. Cook for about 2-3 minutes, allowing the rice to slightly crisp at the bottom.

            Season the Rice: Pour in the soy sauce and oyster sauce (if using), stirring well to ensure the rice is coated evenly. Return the scrambled eggs to the pan, add chopped green onions, and mix everything together. Season with salt and pepper to taste.

              Finish: Drizzle with sesame oil for an added depth of flavor. Give it one final stir.
