Ranch Garlic Parmesan Chicken Skewers

Ingredients
  

1 pound (450g) boneless, skinless chicken breasts, cut into 1-inch cubes

1/2 cup ranch dressing

1/4 cup grated Parmesan cheese

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

1 teaspoon paprika

Salt and pepper to taste

1 cup cherry tomatoes (optional)

1 cup bell pepper, cut into 1-inch pieces (optional)

Skewers (wooden or metal, if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Chicken: In a large bowl, combine the ranch dressing, grated Parmesan cheese, minced garlic, olive oil, Italian seasoning, paprika, salt, and pepper. Mix until well blended.

    Add Chicken: Add the chicken cubes to the marinade and toss until all pieces are evenly coated. Cover the bowl and refrigerate for at least 30 minutes (up to 4 hours for deeper flavor).

      Preheat the Grill: If using a grill, preheat it to medium-high heat (about 375°F/190°C). If using an oven, preheat it to 400°F (200°C) and line a baking sheet with parchment paper.

        Assemble Skewers: Thread the marinated chicken onto the skewers, alternating with cherry tomatoes and bell pepper pieces if desired. Leave a little space between each piece for even cooking.

          Grill or Bake:

            - Grilling: Place the skewers on the hot grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

              - Baking: Place the skewers on the prepared baking sheet and bake for 15-20 minutes, or until the chicken is cooked to an internal temperature of 165°F (75°C).

                Serve: Remove from heat, let rest for a few minutes, then serve with extra ranch dressing for dipping.
