Raspberry Swirl Mousse Bites

For the Mousse:

1 cup fresh raspberries (plus extra for garnish)

2 tablespoons sugar

1 teaspoon lemon juice

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 envelope (1/4 oz) unflavored gelatin

3 tablespoons cold water

For the Crust:

1 cup crushed graham cracker crumbs

1/4 cup unsweetened cocoa powder

1/4 cup sugar

1/2 cup melted butter

Prepare the Raspberry Purée:

    In a small saucepan over medium heat, combine the fresh raspberries, sugar, and lemon juice. Cook for about 5 minutes until the raspberries release their juices and become soft. Remove from heat and allow to cool, then blend until smooth. Strain through a fine-mesh sieve to remove seeds, if desired. Set aside.

      Make the Crust:

        Preheat your oven to 350°F (175°C). In a medium bowl, mix the crushed graham cracker crumbs, cocoa powder, and sugar. Pour in the melted butter and stir until evenly combined. Press the mixture firmly into the bottom of a mini muffin tin to form small crusts (about 1 tablespoon each). Bake for 5-7 minutes until slightly firm. Remove from the oven and allow to cool completely.

          Prepare the Gelatin:

            In a small bowl, sprinkle the unflavored gelatin over the cold water and let it sit for about 5 minutes to bloom. Once blooming, heat it gently in a microwave for about 10-15 seconds or until fully dissolved. Be careful not to let it boil.

              Make the Mousse:

                In a large mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip the mixture until soft peaks form. Carefully fold in the dissolved gelatin and about half of the raspberry purée, creating a swirl effect—do not fully mix to maintain a marbled appearance.

                  Assemble the Mousse Bites:

                    Spoon or pipe the mousse into the cooled graham cracker crusts. Top each mousse bite with a small spoonful of the reserved raspberry purée. You can also gently swirl this to create a marbled presentation.

                      Chill:

                        Place the assembled mousse bites in the refrigerator for at least 2 hours to set before serving.

                          Garnish and Serve:

                            Before serving, garnish each mousse bite with a fresh raspberry on top for an extra pop of color and flavor. Enjoy these delightful treats chilled!
