Ingredients
  

2 cups cooked rice (preferably a day old)

1/2 cup grated carrots

1/2 cup finely chopped bell peppers (any color)

1/4 cup green onions, finely chopped

1/4 cup fresh cilantro, chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin powder

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1/2 cup all-purpose flour (or chickpea flour for a gluten-free option)

1 large egg, beaten (or flax egg for vegan option)

Oil for frying (vegetable or olive oil)

Instructions
 

Prepare the Mixture: In a large mixing bowl, combine the cooked rice, grated carrots, chopped bell peppers, green onions, and cilantro. Mix well.

    Season the Mixture: Sprinkle in the garlic powder, onion powder, cumin powder, cayenne pepper, salt, and pepper. Stir thoroughly to ensure that the spices are evenly distributed throughout the rice mixture.

      Bind the Patties: Add the flour and beaten egg to the rice mixture. If you’re using a flax egg, combine 1 tablespoon of ground flaxseed with 3 tablespoons of water and let it sit for 5 minutes before adding it to the mixture. Mix until everything is well combined and holds together. If the mixture seems too wet, add a little more flour.

        Shape the Patties: With your hands, take a handful of the mixture and form it into small patties, about 2-3 inches in diameter and 1/2 inch thick. Place them on a tray.

          Heat the Oil: In a large frying pan, heat about 1/4 inch of oil over medium heat. Make sure the oil is hot before frying; you can test this by dropping a small piece of the mixture into the oil – it should sizzle.

            Fry the Patties: Carefully place the formed patties into the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side or until they are golden brown and crispy. Adjust the heat as needed to avoid burning.

              Drain the Oil: Once the patties are cooked, remove them from the pan and let them drain on paper towels to absorb any excess oil.

                Serve: Serve the rice patties warm with your favorite sauces, such as sriracha, yogurt sauce, or sweet chili sauce for dipping.
