Rich Chicken Alfredo Roll-Ups

Ingredients
  

2 cups cooked and shredded chicken

8 oz fettuccine pasta

1 cup Alfredo sauce (store-bought or homemade)

1/2 cup grated Parmesan cheese

1/2 cup mozzarella cheese, shredded

1 cup fresh spinach leaves

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1 teaspoon Italian seasoning

8 large flour tortillas

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Prepare the Filling: In a large mixing bowl, combine the cooked chicken, Alfredo sauce, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix thoroughly until well incorporated.

      Preheat Oven: Preheat your oven to 375°F (190°C).

        Assemble the Roll-Ups: Lay a flour tortilla flat on a clean surface. Spread a thin layer of the chicken Alfredo mixture over the tortilla, leaving about an inch of space on the edges. Add a few fresh spinach leaves on top of the filling, and sprinkle some mozzarella cheese.

          Roll Them Up: Carefully roll the tortilla tightly from one end to the other. Place the roll seam-side down in a greased 9x13 inch baking dish. Repeat the process with the remaining tortillas and filling.

            Top and Bake: Once all the roll-ups are in the baking dish, pour any remaining Alfredo sauce over the top and sprinkle the remaining mozzarella cheese. Cover the dish with aluminum foil.

              Bake: Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                Garnish and Serve: Remove from the oven, let cool for a few minutes, then garnish with chopped fresh parsley before slicing into individual portions. Serve warm.
