Roasted Beet and Feta Salad

4 medium beets, scrubbed and trimmed

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

4 cups mixed greens (arugula, spinach, and baby kale)

½ cup crumbled feta cheese

¼ cup walnuts, roughly chopped

½ cup thinly sliced red onion

¼ cup balsamic vinegar

1 tablespoon honey or maple syrup

1 teaspoon Dijon mustard

Fresh herbs for garnish (e.g., parsley or mint)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Beets: Wrap each beet in aluminum foil with a drizzle of olive oil, a pinch of salt, and a dash of pepper. Place them on a baking sheet.

      Roast Beets: Roast the beets in the preheated oven for about 45-60 minutes, or until tender when pierced with a fork. Cooking time varies based on beet size; larger beets will need more time.

        Cool and Peel: Once roasted, remove the beets from the oven and let them cool slightly. Once cool enough to handle, unwrap the beets and use your fingers or a paper towel to gently peel off the skin. Cut the beets into bite-sized wedges.

          Prepare Dressing: In a small bowl, whisk together the balsamic vinegar, honey (or maple syrup), Dijon mustard, and the remaining 2 tablespoons of olive oil. Season with salt and pepper to taste.

            Assemble Salad: In a large salad bowl, combine the mixed greens, roasted beet wedges, sliced red onion, and walnuts. Drizzle with the balsamic dressing and toss gently to combine.

              Add Feta and Herbs: Top the salad with crumbled feta cheese and sprinkle freshly chopped herbs on top for added flavor and color.

                Serve: Serve immediately as a refreshing side dish or a light main course.
