Roasted Butternut Squash and Sausage Pasta

1 medium butternut squash, peeled and cubed (about 4 cups)

2 tablespoons olive oil

Salt and pepper, to taste

1 pound Italian sausage (sweet or spicy, based on preference)

3 cloves garlic, minced

1 small onion, diced

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (optional)

12 ounces pasta (penne or rigatoni work well)

1 cup vegetable or chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Extra Parmesan cheese, for serving

Preheat Oven: Preheat your oven to 400°F (200°C).

    Roast Butternut Squash: Spread the cubed butternut squash on a baking sheet. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat evenly. Roast in the preheated oven for 25-30 minutes, or until tender and lightly caramelized, stirring halfway through.

      Cook Sausage: While the squash is roasting, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until softened. Add the sausage and cook until browned and cooked through, breaking it up with a wooden spoon (about 5-7 minutes). Stir in the minced garlic, thyme, and red pepper flakes, cooking for another minute until fragrant.

        Cook Pasta: In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

          Combine Ingredients: Add the roasted butternut squash to the sausage mixture in the skillet. Pour in the broth and heavy cream, stirring to combine. Let it simmer for about 3-5 minutes to meld the flavors. If the mixture is too thick, add some reserved pasta water to reach your desired consistency.

            Mix Pasta: Add the drained pasta to the skillet and toss everything together. Stir in the grated Parmesan cheese, adjusting seasoning with salt and pepper as needed.
