Roasted Cauliflower & Chickpea Wrap

1 medium head of cauliflower, cut into florets

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

½ cup hummus (store-bought or homemade)

¼ cup pickled red onions (optional)

Squeeze of lemon juice

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Prepare the Vegetables: In a large bowl, combine the cauliflower florets and chickpeas. Drizzle with olive oil, then sprinkle the smoked paprika, cumin, garlic powder, salt, and black pepper over the top. Toss until everything is well coated.

      Roast: Spread the cauliflower and chickpea mixture evenly on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and slightly browned. Be sure to stir halfway through for even roasting.

        Warm the Wraps: While the vegetables are roasting, warm the wraps. You can do this on a dry skillet over medium heat for about 30 seconds on each side or in the microwave for about 15 seconds.

          Assemble the Wraps: Once the roasted vegetable mixture is ready, take a warm wrap and spread a generous tablespoon (or two) of hummus on it. Layer with fresh spinach, the roasted cauliflower and chickpea mixture, pickled red onions (if using), and a squeeze of fresh lemon juice.

            Wrap It Up: Roll the wrap tightly, tucking in the sides as you go to keep the filling contained. Repeat with the remaining wraps.

              Serve: Cut the wraps in half and garnish with fresh parsley if desired. Serve immediately, or wrap them in foil for a tasty on-the-go meal!
