Ingredients
  

1 large flatbread (store-bought or homemade)

1 head of garlic

2 tablespoons olive oil

1 medium zucchini, sliced into thin rounds

1 bell pepper (any color), sliced

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 teaspoon dried oregano

1 teaspoon balsamic vinegar

Salt and pepper, to taste

1 cup fresh spinach

½ cup crumbled feta cheese (optional)

Fresh basil leaves, for garnish

Instructions
 

Prepare the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the head of garlic to expose the cloves. Drizzle 1 tablespoon of olive oil over the exposed cloves, wrap the garlic in aluminum foil, and place it in the oven. Roast for 30-35 minutes until soft and caramelized. Once done, allow it to cool slightly before squeezing the cloves out of their skins.

        Prep the Veggies:
