Ingredients

2 large bell peppers (red, yellow, or orange)

4 ounces feta cheese, crumbled

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and black pepper to taste

4 slices of crusty bread (like sourdough or ciabatta)

Fresh basil or parsley, for garnish

Balsamic glaze (optional, for drizzling)

Instructions

Roast the Peppers: Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper. Cut the bell peppers in half, remove the seeds and stems, and place them cut-side down on the baking sheet. Roast in the oven for about 20-25 minutes or until the skins are blistered and blackened. Remove from the oven and cover with a kitchen towel for about 10 minutes to steam. This will help you peel the skins easily.

Prepare the Feta Mixture: In a mixing bowl, combine the crumbled feta cheese, olive oil, dried oregano, garlic powder, red pepper flakes, salt, and black pepper. Mash the mixture lightly with a fork until it's creamy but still has some texture.

Toast the Bread: While the peppers are steaming, prepare the bread. In a skillet or on a grill pan over medium heat, drizzle a bit of olive oil and toast the bread slices until golden and crispy on both sides (about 2-3 minutes per side). Alternatively, you can toast them in the oven on a baking sheet for about 5-7 minutes.

Peel the Roasted Peppers: Once the peppers are steamed and cool enough to handle, peel off the skins. Cut the peppers into strips or bite-sized pieces.

Assemble Toast: Spread a generous layer of the feta mixture onto each slice of toasted bread. Top with the roasted pepper strips.

Garnish and Serve: Sprinkle fresh basil or parsley on top for a burst of color and flavor. For an extra touch of sweetness, drizzle with balsamic glaze, if desired. Serve immediately while the toast is warm and enjoy!
