Ingredients

2 medium zucchinis, sliced into rounds

1 can (15 ounces) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

4 whole wheat or spinach wraps

1 cup fresh spinach leaves

1 avocado, sliced

½ cup cherry tomatoes, halved

¼ cup feta cheese, crumbled (optional)

2 tablespoons tahini sauce (or your preferred dressing)

Instructions

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

Prepare Vegetables: In a large bowl, combine the sliced zucchini and chickpeas. Drizzle with olive oil, then sprinkle smoked paprika, garlic powder, salt, and pepper. Toss everything together until the zucchinis and chickpeas are well-coated.

Roast the Mixture: Spread the zucchini and chickpea mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the zucchini is tender and begins to brown, stirring halfway through for even roasting.

Prepare the Wraps: While the vegetables are roasting, lay out the whole wheat or spinach wraps on a clean surface. Begin layering with fresh spinach leaves as the base.

Assemble the Wraps: Once the zucchini and chickpeas are roasted and slightly cooled, distribute the mixture evenly over the spinach in each wrap. Add slices of avocado, halved cherry tomatoes, and sprinkle feta cheese on top if using.

Drizzle with Sauce: Finally, drizzle tahini sauce (or your preferred dressing) over the filling for added flavor.

Wrap It Up: Gently fold in the sides of the wraps, then roll from the bottom up to secure the filling. You can slice them in half for easier eating.

Serve: Enjoy your delicious roasted zucchini chickpea wraps either warm or at room temperature, perfect for lunch or a light dinner!
