Salt and Pepper Crispy Shrimp

1 lb large shrimp, peeled and deveined

1 cup all-purpose flour

1 cup cornstarch

2 tsp black pepper

1 tsp white pepper

1 tsp sea salt

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (optional for heat)

1 cup cold sparkling water

Vegetable oil for frying

2-3 green onions, chopped for garnish

Fresh cilantro leaves for garnish

Lemon wedges for serving

Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Make sure they are completely dry to ensure crispiness.

    Make the Coating: In a large bowl, mix together the all-purpose flour, cornstarch, black pepper, white pepper, sea salt, garlic powder, onion powder, and cayenne pepper if using.

      Combine Liquid and Dry Ingredients: Gradually add the cold sparkling water to the dry ingredients, stirring gently until just combined. The batter should be slightly lumpy but can coat the shrimp well.

        Heat the Oil: In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 375°F (190°C). You can test if the oil is ready by dropping a small amount of batter into the oil; it should sizzle and rise to the surface immediately.

          Coat the Shrimp: Dip each shrimp into the batter, shaking off any excess. Do this in small batches to avoid overcrowding the pan.

            Fry the Shrimp: Carefully drop the battered shrimp into the hot oil and fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to turn them occasionally for even cooking.
