3 medium russet potatoes, diced into 1/2-inch cubes

1 medium yellow onion, finely chopped

1 bell pepper (red, green, or yellow), diced

4 large eggs

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley or chives, chopped for garnish

Cook the Sausage: In a large skillet, heat over medium heat. Add the breakfast sausage and cook until browned, breaking it into small pieces with a spatula. Transfer the cooked sausage to a bowl and set aside.

    Prepare the Potatoes: In the same skillet, add the olive oil. Once hot, add the diced potatoes; season with salt, pepper, garlic powder, and smoked paprika. Cook for about 10-12 minutes, stirring occasionally, until they are golden brown and tender.
