Ingredients

1 lb Italian sausage (mild or spicy, your choice)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, diced

1 can (14 oz) diced tomatoes (with juices)

8 cups chicken broth (or vegetable broth)

1 package (9 oz) fresh tortellini (cheese or meat-filled)

2 cups fresh spinach (washed and roughly chopped)

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley (for garnish, optional)

1 tablespoon olive oil

Instructions

Cook the Sausages: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the Italian sausage and cook until browned, breaking it up into small pieces with a wooden spoon (about 5-7 minutes). Drain excess fat if needed.

Sauté Vegetables: Add the diced onion, sliced carrots, and diced celery to the pot. Sauté for 5-6 minutes or until the vegetables are tender. Stir in the minced garlic and cook for another minute until fragrant.

Add Tomatoes and Broth: Pour in the diced tomatoes (with their juices) and the chicken broth. Stir everything together and bring the mixture to a boil.

Add Herbs: Reduce the heat to low, and season the soup with dried basil, oregano, salt, and pepper. Let it simmer for about 10 minutes to allow the flavors to meld.

Add Tortellini: Once the broth is simmering, add the tortellini to the pot. Increase the heat slightly and cook according to the tortellini package instructions (usually about 3-5 minutes), until they float to the top and are tender.

Stir in Spinach: Just before serving, stir in the fresh spinach and let it wilt in the hot soup (about 1-2 minutes).

Serve: Ladle the soup into bowls, and top with grated Parmesan cheese and parsley if desired. Enjoy your hearty soup hot!
