Savory Butternut Bacon Mac Bites

1 cup macaroni pasta

1 cup butternut squash, peeled and diced

4 slices of thick-cut bacon, chopped

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1/2 cup breadcrumbs (Panko for extra crunch)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the macaroni and cook according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

    Roast the Butternut Squash: Preheat your oven to 400°F (200°C). Toss the diced butternut squash with a drizzle of olive oil, salt, and pepper. Spread the squash on a baking sheet in a single layer and roast for 20-25 minutes until tender and slightly caramelized. Allow to cool slightly.

      Fry the Bacon: In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and drain on paper towels, reserving about 1 tablespoon of bacon grease in the skillet.

        Make the Cheese Sauce: In the same skillet (with the reserved bacon grease), reduce the heat to low. Add the cream cheese, stirring until melted and smooth. Mix in the sharp cheddar cheese, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper until well combined.

          Combine Ingredients: In a large bowl, mix the cooked macaroni, roasted butternut squash, crispy bacon, and cheese sauce until everything is evenly coated.

            Prepare for Baking: Preheat your oven to 375°F (190°C). Line a mini muffin tin with non-stick cooking spray. Using a spoon, fill each muffin cup with the mac and cheese mixture, pressing down gently to pack it in. Top each cup with a sprinkle of breadcrumbs.

              Bake the Bites: Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and crispy.

                Serve and Garnish: Allow the bites to cool for a few minutes before carefully removing them from the tin. Garnish with freshly chopped parsley and serve warm.
