Savory Zucchini Cheese Muffins

2 medium zucchinis, grated (about 2 cups)

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

¼ teaspoon black pepper

½ teaspoon garlic powder

½ teaspoon onion powder

1 cup shredded cheddar cheese (or your choice of cheese)

2 large eggs

½ cup buttermilk (or regular milk with a splash of vinegar)

¼ cup olive oil or melted butter

2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a muffin tin by greasing it or lining it with muffin liners.

    Prepare Zucchini: Grate the zucchinis using a box grater and place them in a clean kitchen towel. Squeeze out excess moisture to prevent the muffins from becoming soggy.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.

        Combine Wet Ingredients: In another bowl, beat the eggs, then add the buttermilk and olive oil. Mix well until fully combined.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix – a few lumps are okay!

            Add Zucchini and Cheese: Fold in the grated zucchini and shredded cheese until evenly distributed throughout the batter.

              Fill the Muffin Tin: Use a spoon or ice cream scoop to fill each muffin cup about ¾ full with the batter.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

                  Cool and Serve: Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely. If desired, garnish with fresh parsley before serving.
