2 large zucchinis

1 pound large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for spice)

Prepare the Zucchini: Use a spiralizer to turn the zucchinis into noodles. If you don't have one, you can use a vegetable peeler to create ribbons. Set aside.

    Cook the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, reduce the heat to medium and pour in the heavy cream. Let it simmer for about 2-3 minutes until slightly thickened. Gradually stir in the grated Parmesan cheese until smooth, and adjust the seasoning with salt and pepper.

        Combine: Add the zucchini noodles to the skillet with the Alfredo sauce, tossing to coat the noodles evenly. Cook for an additional 2-3 minutes, allowing the zucchini noodles to soften slightly but still remain al dente.

          Finish and Serve: Return the cooked shrimp back to the skillet, tossing gently to combine. Remove from heat. Garnish with fresh parsley and red pepper flakes (if using). Serve immediately and enjoy your delicious, healthier shrimp Alfredo!
