Shrimp Avocado Salad

1 pound large shrimp, peeled and deveined

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/2 red onion, finely diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Optional: Mixed greens for serving

Prepare the Shrimp: In a bowl, combine the shrimp with olive oil, garlic powder, chili powder, salt, and pepper. Toss to coat evenly.

    Cook the Shrimp: Heat a skillet over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from heat and set aside to cool slightly.

      Combine Ingredients: In a large bowl, add the diced avocados, halved cherry tomatoes, diced red onion, and chopped cilantro.

        Dress the Salad: Squeeze the lime juice over the mixture and gently stir to combine. Be careful not to mash the avocados.

          Add Shrimp: Once the shrimp have cooled, add them to the bowl and toss everything together gently to avoid breaking the avocados.

            Taste & Adjust: Check for seasoning and adjust with additional salt, pepper, or lime juice if needed.
