Ingredients

1 pound medium shrimp, peeled and deveined

1 cup long-grain white rice

1/2 cup chicken broth

1/2 cup water

1/2 pound smoked sausage, sliced (andouille preferred)

1 medium onion, finely chopped

1 green bell pepper, diced

2 celery stalks, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning (adjust to taste)

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional, for heat)

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Base: In a large skillet or Dutch oven, heat the olive oil over medium heat. Add the smoked sausage and cook until it starts to brown, approximately 5-7 minutes. This will add a smoky flavor to the dish.

Sauté the Vegetables: Add the chopped onion, green bell pepper, and celery (this combination is called the holy trinity in Cajun cooking). Sauté until the vegetables are tender, about 5 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.

Add Seasonings: Sprinkle in the Cajun seasoning, paprika, cayenne pepper (if using), and bay leaf. Stir well to coat the vegetables and sausage with the spices.

Cook the Rice: Add the rice to the skillet, stirring it into the mixture to toast it slightly for about 2-3 minutes. This enhances the flavor of the rice.

Add Liquids: Pour in the chicken broth and water. Stir to combine everything evenly. Bring the mixture to a boil.

Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Cook the Shrimp: In the last 5 minutes of cooking, add the peeled shrimp to the skillet, nesting them gently into the rice mixture. Cover again and allow the shrimp to steam until they turn pink and are cooked through, about 5-7 minutes.

Final Touches: Once cooked, remove the bay leaf and taste. Adjust seasoning with salt and pepper if necessary. Fluff the rice with a fork and fold in the shrimp.

Serve: Transfer the dirty rice to a serving dish, garnish with sliced green onions and fresh parsley before serving. Enjoy your Shrimp Dirty Rice Delight!
