Ingredients

12 oz linguine pasta

1 lb large shrimp, peeled and deveined

4 tbsp unsalted butter

3 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

Juice of 1 lemon

Zest of 1 lemon

1/4 cup fresh parsley, chopped

Salt and pepper, to taste

Freshly grated Parmesan cheese for serving

Instructions

Cook the Linguine: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine and set aside.

Prepare the Shrimp: In a large skillet over medium-high heat, add the butter and olive oil. Once the butter has melted, add the minced garlic and red pepper flakes. Sauté for about 1 minute, until fragrant but not browned.

Add the Shrimp: Add the shrimp to the skillet, seasoning with salt and pepper. Cook for about 2-3 minutes on one side until the shrimp start to turn pink, then flip and cook for another 2 minutes.

Deglaze the Pan: Pour in the white wine and scrape the bottom of the skillet to release any flavorful bits. Allow the sauce to simmer for about 2-3 minutes until slightly reduced.

Combine Ingredients: Stir in the lemon juice and zest, then add the cooked linguine directly into the skillet. Toss everything together, adding reserved pasta water a little at a time if the mixture seems dry.

Finish with Fresh Herbs: Remove from heat and fold in the chopped parsley. Taste and adjust seasonings with more salt, pepper, or lemon juice as desired.

Serve: Plate the shrimp scampi linguine and sprinkle with freshly grated Parmesan cheese. Enjoy immediately!
