Ingredients

4 boneless, skinless chicken breasts

1 cup cherry tomatoes, halved

1 medium onion, diced

4 cloves garlic, minced

1/2 cup balsamic vinegar

1/4 cup chicken broth (low-sodium)

1 tablespoon honey

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Olive oil for sautéing

Instructions

Sauté the Aromatics: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant. Remove from heat.

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Place them at the bottom of your slow cooker.

Combine Tomatoes and Sauces: In a medium bowl, mix the balsamic vinegar, chicken broth, honey, oregano, basil, and red pepper flakes (if using). Stir well to combine.

Layer the Ingredients: Add the sautéed onion and garlic mixture over the chicken breasts in the slow cooker. Then, scatter the halved cherry tomatoes on top of everything.

Add the Sauce: Pour the balsamic mixture evenly over the chicken and tomatoes, ensuring everything is well-coated.

Slow Cook: Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

Serve: Once cooked, shred the chicken slightly with two forks for a pulled effect. Stir to mix the ingredients together. Taste and adjust seasoning if necessary.

Garnish and Enjoy: Serve hot, garnished with fresh basil leaves. This dish pairs beautifully with rice, quinoa, or crusty bread to soak up the delicious sauce.
