Slow Cooked BBQ Chicken Sliders

2 pounds boneless, skinless chicken thighs

1 cup BBQ sauce (homemade or store-bought)

1 medium onion, sliced

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

Salt and pepper to taste

8 to 10 slider buns

1 cup coleslaw (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Chicken: Start by trimming any excess fat from the chicken thighs. Pat them dry with paper towels and season with smoked paprika, cumin, salt, and pepper.

    Layer in the Slow Cooker: Place the sliced onion and minced garlic at the bottom of the slow cooker. Lay the seasoned chicken thighs on top and pour the BBQ sauce over the chicken, ensuring it's well coated.

      Cook: Cover the slow cooker and set it on low for 6 to 8 hours or on high for 4 to 5 hours, until the chicken is tender and shreds easily with a fork.

        Shred the Chicken: Once cooked, carefully remove the chicken from the slow cooker and place it onto a cutting board. Shred the chicken using two forks. Return the shredded chicken back to the slow cooker and mix it with the sauce.

          Toast the Buns: While the chicken is absorbing the saucy goodness, preheat your oven to 350°F (175°C). Slice the slider buns in half and place them on a baking sheet. Toast them in the oven for about 5-7 minutes until they're slightly golden.

            Assemble the Sliders: Spoon a generous portion of BBQ chicken onto the bottom half of each toasted slider bun. Top with a spoonful of coleslaw and place the top half of the bun on each slider.
