4 boneless, skinless chicken thighs

2 large sweet potatoes, peeled and diced into 1-inch cubes

1 red onion, sliced into wedges

2 bell peppers (red and yellow), sliced

4 cloves garlic, minced

2 tsp smoked paprika

1 tsp dried oregano

1 tsp ground cumin

1/2 tsp chili powder (optional for heat)

3 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 200°C (400°F).

    Prepare the Marinade: In a large mixing bowl, combine the smoked paprika, dried oregano, ground cumin, chili powder (if using), olive oil, minced garlic, salt, and pepper. Mix well to form a marinade.

      Marinate the Chicken: Add the chicken thighs to the bowl and thoroughly coat them with the marinade. Allow them to sit for at least 15 minutes for maximum flavor.
