Smoked Salmon and Dill Pasta

250g spaghetti or linguine

200g smoked salmon, sliced

1 cup fresh dill, chopped (reserve a few sprigs for garnish)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

Zest of 1 lemon

Juice of 1 lemon

Salt and freshly ground black pepper, to taste

Grated Parmesan cheese (optional, for serving)

1 tablespoon capers (optional, for added flavor)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti (or linguine) and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.

      Combine Ingredients: Lower the heat, add the heavy cream, lemon zest, and lemon juice to the skillet. Stir well to combine and let it simmer gently for about 2-3 minutes.

        Add the Flavors: Stir in the chopped dill, smoked salmon, and capers (if using). Gently mix until the salmon is warmed through. Season with salt and freshly ground black pepper to taste.

          Combine Pasta and Sauce: Add the drained pasta to the skillet. Toss well to coat the pasta with the sauce, adding reserved pasta water a little at a time if it seems too dry. Ensure the pasta is well-coated and creamy.
