Soft Cinnamon Roll Cookies

2 ½ cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

¾ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup light brown sugar, packed

1 tablespoon ground cinnamon (for the filling)

¾ cup powdered sugar (for frosting)

3 tablespoons milk (for frosting)

½ teaspoon vanilla extract (for frosting)

Instructions
 

Prepare the Oven and Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.

    Whisk Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, 1 teaspoon ground cinnamon, and salt. Set aside.

      Cream Butter and Sugar: In a large bowl, with an electric mixer, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Beat in the egg and 1 teaspoon of vanilla extract until well combined.

          Mix Dry Ingredients: Gradually add the dry ingredient mixture to the butter mixture, mixing until just combined. Be careful not to overmix.

            Prepare Cinnamon Filling: In a small bowl, combine the packed brown sugar and 1 tablespoon of ground cinnamon.

              Shape Cookies: Scoop out a tablespoon of dough and flatten it in your palm. Sprinkle a teaspoon of the cinnamon filling in the center. Fold the dough over the filling and roll it into a ball. Repeat with remaining dough and filling.

                Bake: Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden.

                  Cool Cookies: Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                    Make the Frosting: In a medium bowl, whisk together the powdered sugar, milk, and ½ teaspoon of vanilla extract until smooth and creamy. Drizzle over the cooled cookies.

                      Serve and Enjoy: Allow the frosting to set for about 10 minutes before serving. Enjoy the delightful softness and warm cinnamon flavor!
