1 medium head of green cabbage, chopped

1 pound smoked sausage (such as kielbasa or andouille), sliced

4 slices of bacon, diced

1 medium onion, chopped

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1 teaspoon paprika

Salt and black pepper, to taste

1 tablespoon apple cider vinegar

1 tablespoon olive oil (if needed)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Bacon: In a large skillet or cast-iron pan over medium heat, add the diced bacon. Cook until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon from the pan and set aside, leaving the drippings in the skillet.

    Sauté the Sausage: In the same skillet with the bacon drippings, add the sliced smoked sausage. Sauté until browned, about 5-6 minutes. Remove the sausage from the pan and set aside with the bacon.

      Sauté Onions and Garlic: Add the chopped onion to the skillet and cook until it becomes translucent, about 3-4 minutes. Add the minced garlic and red pepper flakes, cooking for an additional 1 minute until fragrant.

        Add Cabbage: Stir in the chopped cabbage and sprinkle with paprika, salt, and black pepper. Mix well to combine all the flavors. If the pan seems dry, drizzle a tablespoon of olive oil to help the cabbage cook down.

          Cook the Cabbage: Cover the skillet and let the cabbage cook for about 10-12 minutes, stirring occasionally, until it is tender and slightly caramelized.

            Combine Ingredients: Return the cooked sausage and bacon to the skillet, and add the apple cider vinegar. Stir well to combine and cook for an additional 2-3 minutes to heat through.

              Serve: Remove from heat and taste, adjusting seasoning as needed. Garnish with fresh chopped parsley before serving.
