Spaghetti Squash with Marinara

1 medium spaghetti squash

2 tablespoons olive oil

Salt and pepper, to taste

1 cup marinara sauce (store-bought or homemade)

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1/4 cup fresh basil, chopped (plus extra for garnish)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Optional toppings: crumbled feta cheese, sautéed mushrooms, or roasted vegetables

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Spaghetti Squash: Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the insides with olive oil and sprinkle with salt and pepper.

      Roast the Squash: Place the squash halves cut-side down on a baking sheet lined with parchment paper. Roast in the preheated oven for about 30-40 minutes, or until the flesh is tender and easily pierced with a fork.

        Cook the Marinara Sauce: While the squash is roasting, heat the remaining olive oil in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Then, add the marinara sauce, dried oregano, and red pepper flakes (if using). Let it simmer for about 10 minutes, stirring occasionally. Stir in the chopped basil just before removing from heat.

          Shred the Squash: Once the spaghetti squash is roasted, remove it from the oven and let it cool for a few minutes. Use a fork to shred the flesh into spaghetti-like strands.

            Combine & Serve: In a large bowl, gently toss the spaghetti squash strands with the marinara sauce until well coated. Divide the mixture onto plates and sprinkle with Parmesan cheese. Garnish with extra basil and any optional toppings you prefer.
