400g spaghetti

2 cups fresh basil leaves, tightly packed

1/2 cup grated Parmesan cheese

1/3 cup pine nuts (toasted for extra flavor)

2 cloves garlic, peeled

1/2 cup extra-virgin olive oil

Salt, to taste

Freshly ground black pepper, to taste

Additional basil leaves and Parmesan for garnish

Instructions
 

Cook the Spaghetti:

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of the pasta water, then drain the spaghetti and set aside.

      Make the Pesto:

        While the pasta is cooking, prepare the pesto. In a food processor, combine the basil leaves, Parmesan cheese, pine nuts, and garlic. Pulse a few times until coarsely chopped.

          Emulsify the Pesto:

            With the food processor running, slowly pour in the olive oil through the feed tube. Process until the mixture is smooth and creamy, scraping down the sides as needed. Season with salt and freshly ground black pepper to taste.

              Mix the Pasta and Pesto:

                Transfer the cooked spaghetti to a large mixing bowl. Add the freshly made pesto and toss to coat evenly. If the pesto is too thick, gradually add some reserved pasta water until you reach your desired consistency.

                  Serve:
