Spicy Buffalo Chicken Flatbread

2 large flatbreads (store-bought or homemade)

1 lb (450g) boneless, skinless chicken breasts, diced

1/2 cup hot wing sauce (e.g., Frank's RedHot)

2 tbsp unsalted butter

1/2 cup ranch dressing (or blue cheese dressing for a traditional kick)

1 cup shredded mozzarella cheese

1/2 cup crumbled blue cheese (optional)

1/4 cup finely chopped green onions

1 tbsp olive oil

Salt and pepper to taste

Fresh cilantro leaves for garnish (optional)

Preheat Oven: Begin by preheating your oven to 425°F (220°C).

    Cook Chicken: In a medium skillet, heat the olive oil over medium heat. Season the diced chicken with a pinch of salt and pepper. Sauté the chicken for about 5-7 minutes or until cooked through, stirring frequently.

      Add Sauce: Once the chicken is cooked, reduce the heat to low. Add the hot wing sauce and butter, stirring to thoroughly coat the chicken. Allow it to cook for another 2-3 minutes until heated through. Remove from heat.

        Prepare Flatbread: Place your flatbreads on a baking sheet lined with parchment paper or lightly greased.
