1 cup panko breadcrumbs

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cumin

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk (or plant-based milk for vegan option)

1 tablespoon olive oil (for drizzling)

8 small corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Prep the Cauliflower: In a large bowl, combine the florets of cauliflower with the buttermilk. Let them soak for about 10-15 minutes to absorb the flavors.

    Mix the Coating: In another bowl, whisk together the flour, smoked paprika, cayenne, garlic powder, onion powder, cumin, salt, and pepper until well combined.

      Coat the Cauliflower: After the cauliflower has soaked, take each floret and coat it first in the flour mixture, shaking off any excess. Then, dip it back into the buttermilk and finally into the panko breadcrumbs, ensuring it’s fully coated.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C).
