Ingredients

1 fresh pineapple, peeled and cut into ½-inch thick rings

2 tablespoons brown sugar

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon ground cinnamon

1 tablespoon lime juice

1 tablespoon honey

Pinch of sea salt

Fresh mint leaves (for garnish, optional)

Lime wedges (for serving)

Instructions

Prepare the Marinade: In a small bowl, mix together the brown sugar, cayenne pepper, ground cinnamon, lime juice, honey, and a pinch of sea salt until well combined. This will be your spicy marinade.

Marinate the Pineapple: Place the pineapple rings in a shallow dish or a resealable plastic bag. Pour the spicy marinade over the pineapple, ensuring each ring is evenly coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for deeper flavor.

Preheat the Grill: Heat your grill to medium-high heat. If you’re using a stovetop grill pan, preheat it over medium-high heat as well.

Grill the Pineapple: Once the grill is hot, place the marinated pineapple rings on the grill. Cook for about 3-4 minutes on each side, or until you see nice grill marks and the pineapple is caramelized.

Serve: Remove the grilled pineapple rings from the grill and garnish with fresh mint leaves if desired. Serve warm with lime wedges on the side.

Enjoy the Heat: These spicy grilled pineapple rings can be enjoyed on their own or as a delightful topping for tacos, burgers, or desserts like vanilla ice cream.
