6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup bell pepper, diced (red or green)

1/4 cup onion, finely chopped

1/4 cup milk (optional for fluffiness)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

Cooking spray or olive oil for greasing

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Muffin Tin: Grease a muffin tin with cooking spray or brush it lightly with olive oil to prevent sticking.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and whisk them until they are well blended. If using, add the milk to the mixture for extra fluffiness and continue whisking.

        Add the Vegetables: Stir in the chopped spinach, diced bell pepper, onion, garlic powder, salt, black pepper, and red pepper flakes if desired. Mix until everything is evenly combined.

          Incorporate Feta: Gently fold in the crumbled feta cheese, being careful not to break it up too much.

            Fill the Muffin Tin: Evenly distribute the egg mixture into the prepared muffin tin cups, filling each about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the muffins are set and the tops are slightly golden.

                Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before using a butter knife to gently loosen them. Transfer the muffins to a wire rack to cool completely. Enjoy warm or at room temperature!
