Spinach Mushroom Stuffed Pasta Shells

16 jumbo pasta shells

1 cup ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

2 cups fresh spinach, chopped

1 cup cremini or button mushrooms, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 1/2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to boil. Add the jumbo pasta shells and cook according to package directions until al dente. Drain and set aside on a baking sheet to cool slightly.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the chopped mushrooms and sauté for about 5-7 minutes until they are soft and their moisture has evaporated. Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Season with oregano, salt, and black pepper. Remove from heat and let it cool slightly.

        Prepare the Cheese Mixture: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese. Add the sautéed spinach and mushroom mixture to the bowl. Mix until well combined.

          Stuff the Shells: Take each pasta shell and carefully fill it with the spinach and mushroom cheese mixture. Place the stuffed shells in a 9x13 inch baking dish.

            Assemble: Pour marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella and Parmesan cheese on top.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden.

                Garnish & Serve: Remove from the oven and let cool slightly. Garnish with fresh basil leaves, if desired, and serve warm.
