Steak & Queso Rice

1 lb flank steak, sliced against the grain

1 cup jasmine rice

2 cups beef broth

1 cup queso blanco (store-bought or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup corn (fresh, frozen, or canned)

1 teaspoon cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Rice: In a medium pot, combine jasmine rice and beef broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender and liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Steak: While the rice cooks, season the sliced flank steak with salt, pepper, cumin, and smoked paprika.

      Sear the Steak: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned steak slices in a single layer. Sear for about 3-4 minutes on each side until browned and cooked to your desired doneness. Remove from the skillet and let rest.

        Sauté Vegetables: In the same skillet, add the chopped onion and red bell pepper. Sauté for about 5 minutes until softened. Add the minced garlic and corn, cooking for an additional 2-3 minutes.

          Combine Everything: Reduce the heat to medium-low and return the steak to the skillet, mixing it with the vegetables. Pour in the queso blanco and stir until well combined and creamy.

            Mix with Rice: Add the cooked rice to the skillet and gently fold it into the steak and queso mixture until everything is evenly distributed and heated through.

              Serve: Plate the Steak & Queso Rice, garnishing with fresh chopped cilantro. Serve with lime wedges on the side for a zesty flair.
