Ingredients

For the Dough:

4 cups all-purpose flour

1 packet (2 1/4 teaspoons) active dry yeast

1/2 cup granulated sugar

1 teaspoon salt

1/2 cup milk (warm, about 110°F)

1/4 cup unsalted butter (melted)

2 large eggs

For the Strawberry Cheesecake Filling:

1 cup fresh strawberries (hulled and chopped)

8 oz cream cheese (softened)

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 cup sour cream

For the Topping:

1/2 cup powdered sugar

1-2 tablespoons milk (for drizzling)

Fresh strawberries for garnish (optional)

Instructions

Make the Dough: In a large bowl, mix warm milk, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add melted butter, eggs, and salt, mixing until combined. Gradually add flour, kneading until a soft dough forms (about 5-7 minutes). Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Filling: In a medium bowl, beat together the softened cream cheese, powdered sugar, vanilla extract, and sour cream until smooth. Gently fold in the chopped strawberries, being careful not to break them up too much. Set aside.

Roll Out the Dough: Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a large rectangle (about 16x12 inches).

Assemble the Rolls: Spread the strawberry cheesecake filling evenly over the rolled-out dough, leaving a small border around the edges. Starting from one long side, carefully roll the dough tightly into a log. Cut the log into 12 equal pieces and place them in a greased baking dish.

Second Rise: Cover the rolls with a clean towel and let them rise for another 30-45 minutes until puffy.

Bake: Preheat the oven to 350°F (175°C). Bake the rolls for 25-30 minutes, or until golden brown. Let them cool for a few minutes out of the oven.

Prepare the Glaze: In a small bowl, mix the powdered sugar with 1 tablespoon of milk, adding more milk if necessary to achieve a drizzling consistency.

Drizzle and Serve: Drizzle the glaze over the warm rolls and garnish with fresh strawberries. Serve warm, and enjoy the delightful blend of strawberry cheesecake flavors in these cinnamon rolls!
