1 cup unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 tablespoon lemon zest (from about 1 lemon)

1/4 cup fresh lemon juice

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup fresh strawberries, hulled and chopped (about 10-12 strawberries)

Optional: powdered sugar for dusting

Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk together until well blended.

      Add the eggs one at a time, whisking until fully incorporated. Then stir in the vanilla extract, lemon zest, and freshly squeezed lemon juice until combined.

        In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

          Gently fold in the chopped strawberries, ensuring they are evenly distributed throughout the batter.

            Pour the batter into the prepared baking dish and spread evenly with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean or with a few moist crumbs.

                Let the blondies cool in the pan for about 10 minutes, then lift them out using the parchment paper (if used) and transfer to a wire rack to cool completely.

                  Once cooled, cut into squares and optionally dust with powdered sugar for a sweet finish.
