Ingredients

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

2 tbsp poppy seeds

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

Zest of 1 lemon

¼ cup fresh lemon juice

½ cup plain yogurt (or sour cream)

1 cup fresh strawberries, diced

1 tsp vanilla extract

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds. Set aside.

Cream the Butter and Sugar: In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

Add Eggs and Flavorings: Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the lemon zest, lemon juice, yogurt, and vanilla extract until smooth.

Mix Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful to avoid overmixing.

Fold in Strawberries: Gently fold in the diced strawberries, ensuring they are evenly distributed throughout the batter.

Fill Muffin Tin: Divide the muffin batter evenly among the prepared muffin cups, filling each cup about ¾ full.

Bake the Muffins: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean and the tops are lightly golden.

Cool and Serve: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Optional: dust with powdered sugar before serving for a sweet touch!
