4 cups fresh arugula, washed and dried

1 cup ripe strawberries, hulled and sliced

1 large ripe peach, pitted and sliced

1/2 cup crumbled goat cheese

1/4 cup walnuts, toasted and roughly chopped

1/4 cup balsamic vinaigrette (store-bought or homemade)

Salt and pepper, to taste

Fresh mint leaves, for garnish (optional)

Instructions
 

Toast the Walnuts: In a small dry skillet over medium heat, add the walnuts. Toast for about 5-7 minutes, stirring frequently until golden brown and fragrant. Remove from heat and let cool.

    Prepare the Dressing: If making a homemade balsamic vinaigrette, whisk together 3 tablespoons of balsamic vinegar, 1 tablespoon of honey, and 1/2 cup of olive oil in a small bowl. Season with salt and pepper to taste.

      Assemble the Salad: In a large bowl, add the fresh arugula. Top it with sliced strawberries, peach slices, and crumbled goat cheese.

        Add the Walnuts: Sprinkle the toasted walnuts evenly over the salad.
