Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup mini marshmallows

1 cup whipped topping (thawed)

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional)

1 cup crushed shortbread cookies (plus extra for garnish)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with a tablespoon of powdered sugar. Toss gently to coat and let them macerate for about 10 minutes. This helps release their juices and enhances their sweetness.

Make the Creamy Base: In a separate large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add in the remaining powdered sugar, vanilla extract, and almond extract (if using). Continue to beat until the mixture is fluffy and well combined.

Fold in the Whipped Topping: Gently fold the whipped topping into the cream cheese mixture until fully combined. Be careful not to deflate the whipped topping to maintain a light texture.

Combine Ingredients: Add the macerated strawberries, mini marshmallows, and crushed shortbread cookies to the creamy mixture. Carefully fold everything together until evenly distributed.

Chill and Serve: Transfer the fluff salad to a serving dish (or individual cups) and refrigerate for at least 30 minutes to allow the flavors to meld. Before serving, garnish with additional crushed shortbread cookies and a few fresh mint leaves for a pop of color.

Enjoy: Serve chilled and enjoy this delightful, fluffy take on traditional strawberry shortcake!
