1 pound fresh strawberries, hulled and sliced

2 tablespoons granulated sugar (for strawberries)

2 cups heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 box (12 oz) of graham crackers

Optional: Mint leaves for garnish

Prepare the Strawberries: In a medium bowl, combine the sliced strawberries with granulated sugar. Gently toss to coat the strawberries and let them sit for about 15-20 minutes until they release their juices.

    Make the Whipped Cream: In a large mixing bowl, use an electric mixer to beat the heavy whipping cream until it starts to thicken. Gradually add the powdered sugar and vanilla extract, continuing to beat until soft peaks form. Be careful not to over-whip!

      Assemble the Cake: In a rectangular or square dish, spread a thin layer of whipped cream at the bottom. Place a layer of graham crackers over the whipped cream, breaking them as needed to fit.
