2 cups fresh sugar snap peas, trimmed and halved

1 cup cherry tomatoes, halved

1/2 cup thinly sliced red onion

1/4 cup crumbled feta cheese

1/4 cup sliced almonds, toasted

1 tablespoon fresh dill, chopped

1 tablespoon olive oil

1 tablespoon white wine vinegar

1 teaspoon Dijon mustard

Salt and freshly ground black pepper, to taste

Blanch the Peas: Bring a pot of salted water to a boil. Add the sugar snap peas and boil for about 1-2 minutes until bright green and slightly tender. Immediately transfer them to an ice bath to stop cooking, then drain and set aside.

    Prepare the Dressing: In a small bowl, whisk together olive oil, white wine vinegar, Dijon mustard, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the blanched sugar snap peas, cherry tomatoes, red onion, feta cheese, sliced almonds, and fresh dill.
