8 oz farfalle pasta (bow-tie pasta)

1 lb large shrimp, peeled and deveined

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled

Zest and juice of 1 lemon

1/4 cup olive oil

2 cloves garlic, minced

Salt and pepper to taste

Optional: 1 avocado, diced for creaminess

Cook the Pasta: In a large pot of salted boiling water, cook the farfalle pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Shrimp: In a medium skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp, sprinkle with salt and pepper, cooking until they turn pink and opaque (about 2-3 minutes per side). Remove from heat and let cool.
