Summer Veggie Pizza Rolls

1 package (1 lb) of refrigerated pizza dough

1 cup shredded mozzarella cheese

1 cup diced summer vegetables (like zucchini, bell peppers, and tomatoes)

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon garlic powder

Salt and pepper to taste

1/4 cup marinara sauce (for dipping)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Veggies: In a medium bowl, combine the diced summer vegetables with olive oil, Italian seasoning, garlic powder, salt, and pepper. Toss them until nicely coated.

      Roll Out the Dough: On a lightly floured surface, roll out the pizza dough into a rectangle about 1/4-inch thick.

        Spread the Cheese: In a bowl, mix the ricotta cheese and half of the mozzarella cheese until well combined. Spread this mixture evenly over the rolled-out dough, leaving a small border around the edges.

          Add Veggies and More Cheese: Evenly sprinkle the prepared summer veggies over the cheese layer. Then top with the remaining mozzarella and the grated Parmesan cheese.

            Roll It Up: Starting from one end, carefully roll the dough up into a tight log. Be gentle to avoid tearing the dough.

              Slice the Rolls: Using a sharp knife, slice the rolled dough into 1 to 1.5-inch thick pieces and place them cut-side up on the prepared baking sheet.

                Bake: Brush the tops of the rolls with a little olive oil and bake in the preheated oven for 15-20 minutes, or until golden brown and bubbly.

                  Serve: Remove the pizza rolls from the oven and let them cool for a few minutes. Serve warm with marinara sauce for dipping.
