Swedish Meatball Noodle Bake

For the Meatballs:

1 pound ground beef

1/2 pound ground pork

1/2 cup breadcrumbs

1/4 cup milk

1/4 cup finely chopped onion

1 clove garlic, minced

1 large egg

1 teaspoon ground allspice

1 teaspoon ground nutmeg

Salt and pepper, to taste

For the Noodle Bake:

12 ounces egg noodles

2 cups beef broth

1 cup sour cream

1 cup shredded mozzarella cheese

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

2 tablespoons chopped fresh parsley (plus extra for garnish)

1/2 teaspoon paprika

Instructions
 

Prepare the Meatballs:

    - In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, onion, garlic, egg, allspice, nutmeg, salt, and pepper. Mix until just combined.

      - Form the mixture into small meatballs, about 1 inch in diameter, and set aside.

        Cook the Meatballs:

          - In a large skillet over medium heat, add oil and brown the meatballs on all sides, about 5-7 minutes. They do not need to be cooked through at this stage. Remove them from the skillet and set aside.

            Boil the Egg Noodles:

              - In a separate pot, boil salted water and cook egg noodles according to package instructions until al dente. Drain and set aside.

                Prepare the Sauce:

                  - In the same skillet used for the meatballs, add beef broth, sour cream, Worcestershire sauce, soy sauce, and paprika. Stir until well combined and heat through, scraping up any browned bits from the bottom.

                    Combine Ingredients:

                      - In a large mixing bowl, combine the cooked egg noodles, cooked meatballs, and sauce. Gently fold in the shredded mozzarella cheese and parsley until well mixed.

                        Bake:

                          - Preheat the oven to 350°F (175°C).

                            - Transfer the noodle and meatball mixture to a greased 9x13 inch baking dish. Spread evenly and sprinkle more mozzarella cheese on top if desired.

                              - Bake in the preheated oven for 25-30 minutes, or until the top is bubbly and golden brown.

                                Garnish and Serve:

                                  - Remove from the oven and let sit for 5 minutes before serving. Garnish with extra parsley for a pop of color.
