1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced (or canned pineapple chunks, drained)

1/2 cup red bell pepper, chopped

1/2 cup green bell pepper, chopped

1/4 cup red onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sriracha (adjust to taste)

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 tablespoons vegetable oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Cooked rice or quinoa (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the chicken pieces with soy sauce, honey (or maple syrup), rice vinegar, and sriracha. Toss to coat well and let it marinate for at least 30 minutes in the refrigerator.

    Prepare the Vegetables: While the chicken is marinating, chop the pineapple, red and green bell peppers, red onion, and set aside.

      Cook the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once the oil is hot, add the marinated chicken (discarding excess marinade) and sauté for about 5-7 minutes, or until the chicken is browned and cooked through.

        Add Vegetables: Add the minced garlic and ginger to the skillet, cooking for another minute until fragrant. Then, incorporate the chopped red and green bell peppers and red onion, stirring occasionally, and sauté for about 3-4 minutes until they soften.

          Finish the Sauce: Add the diced pineapple to the skillet and pour in the leftover marinade (if any). Stir to combine and let it cook for 2-3 minutes. Slowly pour in the cornstarch slurry to thicken the sauce, stirring constantly until the sauce is glossy and coats the chicken well. Season with salt and pepper to taste.

            Serve: Remove from heat and serve the Sweet and Spicy Pineapple Chicken over cooked rice or quinoa. Garnish with freshly chopped cilantro.
