Ingredients

1 ½ cups all-purpose flour

1 cup fresh blueberries (or frozen, if necessary)

½ cup almond flour

¾ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 teaspoon vanilla extract

½ cup milk (dairy or non-dairy)

2 teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon almond extract

Optional: ¼ cup sliced almonds for topping

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it with cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, almond flour, sugar, baking powder, baking soda, and salt. Whisk together until well mixed.

Combine Wet Ingredients: In another bowl, whisk together the melted butter, eggs, vanilla extract, almond extract, and milk until smooth.

Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay. Fold the blueberries into the batter using a spatula.

Fill Muffin Cups: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full. If desired, sprinkle sliced almonds on top of each muffin for added texture and crunch.

Bake: Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer the muffins to a wire rack to cool completely.

Serve: Optionally, dust with powdered sugar before serving. Enjoy these delightful sweet blueberry almond muffins warm or at room temperature!
